What's For Breakfast?


When Sarah's Kids spent a few days with us this summer, her son Isaac went home talking about the things that we ate.  (Isn't that the focus of so many little boys?)

Isaac has been asking his mom to get the recipe for Baked Oatmeal, so I thought I would pull up an old post from 2008 and share it with you all, too.

I just remembered that I wanted to get this recipe out to you, when I walked into the kitchen and found Ben preparing it for tomorrow's breakfast. He knew what was on the meal calendar for tomorrow, and he decided to whip it up tonight so that it would be ready to pop into the oven first thing in the morning.
Don't tell me that your kids "Hate Oatmeal" ... they probably haven't tried this recipe yet.

About 7 years ago, my older teen boys went to a summer camp at a horse ranch in North Dakota, and came home ranting and raving about this new breakfast meal that they'd had. I suggested that they might like to get the recipe, and Jeremiah immediately emailed the cook and asked for it.

This is not only one of our kids' favorite breakfasts, but they also eat the leftovers as an afternoon snack if they're hungry.

Baked Oatmeal

1 cup Melted Butter
1 cup Brown Sugar
3 tsp. Cinnamon
6 Eggs
3/4 tsp Salt
3 tsp. Baking Powder
1 1/2 cup Milk
1 cup Water
8 cups Oats (regular or old fashioned ... not instant oats)


Mix all ingredients together.
Pour into a greased 9 x 13 baking dish.
Bake at 350 F for 30 minutes.

Serve in a bowl. 
Most of our kids like to have it topped with milk. 
Another treat is to also top with fruit or applesauce.

  3. Wow! HUGE RECIPE!!! Does the 9x13 feed 9 or so? It's ok to make ahead and put iin fridge before morning.

    I LOVE the Coach's Oats (I get them at Costco) and I bet they'd be great mixed in with this!!

    1. Actually . . . we are just now getting used to cooking in our "small" 9x13 dishes again. For the past 10 years or so we have almost exclusively used 11x15 dishes.

      My kids are all big eaters, so I don't know really how many a 9x13 will feed. Sorry.

      Yes. Make it ahead. Also, the leftovers work well a 2nd or 3rd day, too. (It keeps well in the refrigerator.)

      What are Coach's Oats? I haven't heard of them.

      Let me know if you give this recipe a try.

  4. Coach's Oats are a brand of toasted oats, sort of steel cut variety. I get them at Coscto and they are FABULOUS! Love them so much. The toasting gives them more natural sweetness so you need less sugar (but still need the butter! yum!)

  5. Mine came out kind of dry so I went back to see if I had written the liquids down wrong. I never wrote down the eggs!!! It was pretty good, but now I'll try it over with the eggs and see how it is!!! Only me!
