Pumpkin Oat Bran Muffins




Yummmmm . . . . .

I just made some very tasty LOW CALORIE Pumpkin Oat Bran Muffins (with only 65 cal. per muffin).  Oh! My!  These are going to definitely be my "treat" during the holidays, as everyone else consumes 10 pounds of sugar (or more).



I got the basic recipe off of the "SparkPeople" website, but changed things a bit to make them even more Low Calorie and with a bit more "Spice" to them.


As you can see, I had to taste one before writing this post.  (smile)




Preheat Oven to 425F

Bowl #1  Combine:

1                     Egg
1 sm. can       Pumpkin (1 3/4 cup)
1 tsp.             Vanilla
1/2 cup          Sugar Substitute (Splenda measures the same as sugar)
1/3 cup          1% Milk
1/3 cup          Unsweetened Applesauce


Bowl #2   Combine:

1 cup               Whole Wheat Flour  (I grind my own)
2/3 cup           Oat Bran  (bought in the hot cereal aisle)
1 tsp.                Baking Soda
1 tsp.                Baking Powder
1 tsp.                Salt
1  1/2 tsp.        Cinnamon
1/2 tsp.            Ground Ginger
1/4 tsp.            Nutmeg
1/8 tsp.            All-Spice 


Combine the contents of both bowls.  Mix well.  Fill 12 Muffin Cups.  Bake 20 minutes.

* * *  use real sugar if you'd like, just add 35 calories per muffin.  They are still definitely a Low Calorie option at 100 Cal. Per Muffin.



These are SERIOUSLY DELICIOUS . . . and ONLY 65 CALORIES.  WOO HOO!




Have you ever used these little re-useable silicone (rubber) muffin cups?



No oil necessary.

The muffins (or cupcakes) pop right out.

  2. I love the little red muffin cups! I've seen silicone muffin tins, but never the cute little cups that go in the metal tins. Where did you get them?

    1. I think I got them at Kohls. That's where I get a lot of my kitchen things.
